Ingredients

  • 3 cups apples peeled and chopped, firm varieties like Honeycrisp or Granny Smith
  • 3 cups pears peeled and chopped, varieties like Bosc or Anjou
  • 2 cups plums pitted and chopped, skin optional
Flavor
  • 1 tablespoon lemon zest from one lemon
  • 1 tablespoon lemon juice freshly squeezed from one lemon
For Cooking
  • 3 cups cold water enough to cover the fruits
  • 2 cups granulated sugar consider coconut sugar for variation

Method
 

Preparation
  1. Peel and chop apples and pears, pit and chop plums. Set aside.
  2. In a large pot, combine fruits, lemon zest, lemon juice, and cold water.
Cooking
  1. Heat to medium, bring to a gentle boil, and simmer uncovered for about 1.5 hours.
  2. Gradually add sugar, stirring continuously until dissolved for about 5 minutes.
  3. Bring to a rapid boil for 5 minutes until desired consistency is reached.
  4. Skim off foam to achieve clarity in the jam.
  5. Pour hot jam into sterilized jars and seal them tightly.
