- Preheat your oven to 350°F (175°C) and prepare a 10 oz. ramekin with nonstick spray.
- Blend rolled oats, protein powder, almond milk, and sweetener until smooth. Set aside.
- In a saucepan, combine blueberries, lemon juice, vanilla extract, and Swerve. Heat until boiling, stirring occasionally and smashing some blueberries.
- Pour half of the oat mixture into the ramekin, create a well in the center, and layer in the blueberry filling. Cover with remaining oat mixture.
- Bake for 25-30 minutes, checking for doneness at the 25-minute mark by inserting a toothpick.
- Allow to cool for about 5 minutes before serving, optionally topping with sweeteners.
