Equipment

  • Microwave
  • Food Processor
  • Baking sheet

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a microwave-safe bowl, add the shredded mozzarella and heat in the microwave for 1 minute, stirring afterward. Heat for an additional 30 seconds if necessary, until smooth.
  3. In a food processor, combine the melted mozzarella with almond flour, coconut flour, ground golden flax, egg, and sweetener. Pulse until a uniform, dough-like consistency is reached.
  4. Press the dough evenly into a prepared 9x12-inch baking sheet, ensuring it's about 1/4-inch thick.
  5. Mix cream cheese, sweetener, and vanilla extract until smooth. Spread this filling evenly down the center of the pressed dough.
  6. Sprinkle frozen blueberries over the cream cheese filling evenly.
  7. Cut the edges of the dough about 1 inch apart and fold the strips over the filling to create a braid.
  8. Bake in the preheated oven for 40-45 minutes until golden brown.
