Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C). Gather your ingredients.
  2. In a large skillet, heat 2 tablespoons of avocado oil over medium-high heat. Season the chopped chicken with salt and pepper. Cook chicken for 5-7 minutes until golden brown.
  3. Spray an 8x8 baking dish with cooking spray. Layer the cooked chicken in the bottom. Top with chopped tomatoes, minced garlic, dried oregano, and balsamic vinegar.
  4. Sprinkle a generous amount of shredded mozzarella cheese over the mixture.
