Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients.
  2. In a large skillet, heat avocado oil over medium-high heat. Season chicken breasts with salt and pepper, and sear for 5-7 minutes on each side.
  3. Transfer the seared chicken to a baking dish. Top with chopped tomatoes, minced garlic, oregano, and balsamic vinegar.
  4. Sprinkle mozzarella cheese over the top of the chicken and tomato mixture.
  5. Bake in the preheated oven for about 18-20 minutes until the cheese is melted and the sauce is bubbly.
  6. Let it rest for 5 minutes, then garnish with fresh basil leaves before serving.
