- Rinse sushi rice under cold water until water runs clear. Cook rice with water for 18-20 minutes. Mix in vinegar, sugar, and salt. Let cool.
- Wrap bamboo mat in plastic wrap. Fill a bowl with water and rice vinegar mix. Place cooled sushi rice next to mat.
- Lay nori on mat. Spread sushi rice over nori, leaving a gap at the top. Add fillings across the center.
- Lift the edge closest to you and roll away, ensuring fillings are snug. Seal the edge with a little water.
- Brush top with spicy mayo or eel sauce and sprinkle with panko breadcrumbs or fried onions.
- Slice the roll into 8 pieces with a damp sharp knife. Serve with soy sauce, pickled ginger, and wasabi.
