- Preheat your waffle iron according to the manufacturer's instructions, usually set to medium-high heat. Grease the cooking surface with cooking spray or melted butter.
- In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, baking soda, and a pinch of salt. Set aside.
- In a separate bowl, combine buttermilk, melted butter, eggs, and honey (if using). Whisk until smooth and well-incorporated.
- Add the wet ingredients to the dry ingredient bowl and gently stir until just blended. Fold in the sharp cheddar cheese and pickled jalapeños.
