Method
 

Step-by-Step Instructions
  1. In a medium bowl, mash one ripe avocado with the juice of half a lemon, adding salt and pepper to taste.
  2. Lay out two slices of sourdough or artisan bread. Spread mayonnaise or aioli on one side of each slice.
  3. On the other side, layer the avocado spread, followed by the cooked shredded chicken and a slice of cheese. Complete with the second slice of bread.
  4. Heat a skillet over medium heat and melt a tablespoon of butter. Place the sandwich in the skillet and grill for about 3–4 minutes until golden brown.
  5. Flip the sandwich and toast the other side for another 3–4 minutes until the cheese is melty.
  6. Remove from skillet, let cool for a minute, then slice in half and serve warm.
