- In a medium bowl, mash one ripe avocado with the juice of half a lemon, adding salt and pepper to taste.
- Lay out two slices of sourdough or artisan bread. Spread mayonnaise or aioli on one side of each slice.
- On the other side, layer the avocado spread, followed by the cooked shredded chicken and a slice of cheese. Complete with the second slice of bread.
- Heat a skillet over medium heat and melt a tablespoon of butter. Place the sandwich in the skillet and grill for about 3–4 minutes until golden brown.
- Flip the sandwich and toast the other side for another 3–4 minutes until the cheese is melty.
- Remove from skillet, let cool for a minute, then slice in half and serve warm.
