- Start by washing and drying a medium apple, preferably Honeycrisp or Fuji. Grate until you have about 1/2 cup.
- In a mixing bowl, combine the grated apple with one egg, 2 tablespoons of all-purpose flour, 1/4 teaspoon of baking powder, and 1/4 teaspoon of cinnamon. Stir gently until just combined.
- Preheat a non-stick frying pan over medium heat. Add 1 tablespoon of oil or butter to coat the base evenly.
- Drop spoonfuls of the batter into the hot pan, shaping them into mini fritters. Cook for 2-3 minutes on one side.
- Gently flip the fritters and cook for another 2-3 minutes until both sides are golden brown.
- Continue to cook the remaining batter in the same manner, adding more oil or butter as needed.
