Step-by-Step Instructions
  1. Start by washing and drying a medium apple, preferably Honeycrisp or Fuji. Grate until you have about 1/2 cup.
  2. In a mixing bowl, combine the grated apple with one egg, 2 tablespoons of all-purpose flour, 1/4 teaspoon of baking powder, and 1/4 teaspoon of cinnamon. Stir gently until just combined.
  3. Preheat a non-stick frying pan over medium heat. Add 1 tablespoon of oil or butter to coat the base evenly.
  4. Drop spoonfuls of the batter into the hot pan, shaping them into mini fritters. Cook for 2-3 minutes on one side.
  5. Gently flip the fritters and cook for another 2-3 minutes until both sides are golden brown.
  6. Continue to cook the remaining batter in the same manner, adding more oil or butter as needed.
