  • 2 tablespoons Black Tea Leaves (or Tea Bags) Assam or Ceylon recommended
For the Coconut Base
  • 1 cup Coconut Milk Full-fat or light
For the Spice Blend
  • 1 piece Cinnamon Stick Substitute ground cinnamon if needed
  • 4 pieces Whole Cardamom Pods Ground cardamom is an alternative
  • 2 slices Fresh Ginger Fresh preferred for brightness
  • 2 pieces Whole Cloves Ground cloves can be used
For Sweetness & Garnish
  • 1 tablespoon Coconut Sugar (optional) Regular sugar or honey can substitute
  • 1 pinch Ground Cinnamon or Star Anise (optional) For garnish and added flavor

Method
 

Step-by-Step Instructions
  1. Boil 1½ cups of water in a medium saucepan. Add cinnamon stick, cardamom pods, ginger, and cloves. Simmer for 5 minutes.
  2. After 5 minutes, add 2 tablespoons of black tea leaves or 2 tea bags. Let steep for 3 to 5 minutes.
  3. Pour in 1 cup of coconut milk and stir. Simmer on low for 2 to 3 minutes.
  4. Stir in 1 tablespoon of coconut sugar for sweetness, adjust to taste.
  5. Strain the chai into cups or mugs using a fine mesh strainer.
  6. Garnish with ground cinnamon or star anise if desired. Serve hot or chilled.
