Preparation
- In a medium bowl, combine the ingredients for the streusel. Mix thoroughly and refrigerate for about 30 minutes.
 - Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
 - In a large bowl, whisk together the dry ingredients for the dough. Set aside.
 - In a stand mixer, cream together the butter and sugars until light and fluffy.
 - Add the egg, egg yolk, and vanilla extract, mixing until just combined.
 - Gradually add the dry mixture to the wet mixture until fully combined.
 - Portion the dough into balls, press down to flatten, and make an indent in the center.
 - Fill each indent with the streusel mixture.
 - Bake for 8-11 minutes until edges are light golden brown, then let cool before icing.
