- In a large mixing bowl, combine the ground chicken, cottage cheese, egg, breadcrumbs, garlic powder, onion powder, salt, pepper, and chopped parsley if using. Stir gently until just combined.
- Using about 2 tablespoons of the mixture, form small patties and flatten them slightly. You should get around 8-10 patties.
- In a large skillet, heat olive oil over medium heat. Carefully add the patties in a single layer.
- Cook the patties for 4-5 minutes on one side until golden-brown. Flip and cook for an additional 4-5 minutes.
- Transfer the patties to a plate lined with paper towels to absorb excess oil. Serve them hot.
