Preparation Steps
- Preheat the oven to 400°F (200°C) and spray ramekins with olive oil to prevent sticking.
- Spoon 1/3 cup of cottage cheese into each ramekin, spreading it evenly as the base.
- Sprinkle garlic powder, dried oregano, and crushed red pepper flakes over the cottage cheese.
- Add 1 to 1.5 tablespoons of low-sugar marinara sauce on top of the cottage cheese.
- Layer shredded mozzarella cheese and sprinkle grated parmesan cheese atop the marinara.
- Place four mini pepperoni slices on top of each ramekin.
- Bake for 12-15 minutes until cheese is bubbly and slightly browned.
- Cool for 5 minutes before serving warm with a side salad, if desired.
