  • 1 tablespoon Low-Sugar Marinara Sauce Rao’s or homemade recommended
For the Cheese Layer
  • 1 cup Shredded Mozzarella Cheese Opt for part-skim for lower fat
  • 0.25 cup Grated Parmesan Cheese
For Seasoning
  • 1 teaspoon Dried Oregano Italian seasoning can be a substitute
  • 1 teaspoon Garlic Powder Can replace with fresh minced garlic (1 clove)
  • 0.25 teaspoon Crushed Red Pepper Flakes Optional
For Toppings
  • 8 slices Mini Pepperoni Slices Use chopped regular pepperoni if mini is unavailable
  • 1 spray Olive Oil Spray Cooking oil is a suitable alternative

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C) and spray ramekins with olive oil to prevent sticking.
  2. Spoon 1/3 cup of cottage cheese into each ramekin, spreading it evenly as the base.
  3. Sprinkle garlic powder, dried oregano, and crushed red pepper flakes over the cottage cheese.
  4. Add 1 to 1.5 tablespoons of low-sugar marinara sauce on top of the cottage cheese.
  5. Layer shredded mozzarella cheese and sprinkle grated parmesan cheese atop the marinara.
  6. Place four mini pepperoni slices on top of each ramekin.
  7. Bake for 12-15 minutes until cheese is bubbly and slightly browned.
  8. Cool for 5 minutes before serving warm with a side salad, if desired.
