  • 4 cups Sauerkraut homemade for a milder taste or substitute with cabbage
  • 4 cups Potatoes can swap with mashed potatoes, rutabaga, or noodles
  • 1 cup Onions diced
  • 2 tablespoons Butter or oil/margarine if desired
  • 2 large Eggs can use flaxseed mixture for a vegan option

  • 1 cup Cheese for topping
  • 6 slices Bacon

Method
 

Steps
  1. Preheat your oven to 350°F (175°C).
  2. Melt 2 tablespoons of butter in a skillet over medium heat. Sauté diced onions for 5-7 minutes until translucent.
  3. Grease a 9x13 inch casserole dish. Layer sauerkraut evenly at the bottom.
  4. Add the layer of pork on top of the sauerkraut. Season with salt and pepper.
  5. Spread a layer of sliced or mashed potatoes evenly over the pork.
  6. In a bowl, whisk together 2 eggs with 1/2 cup of milk. Pour over the layered casserole.
  7. Bake in the preheated oven for 30-45 minutes until bubbling and lightly browned on top.
  8. Let the casserole rest for a few minutes before serving.
