Soup Base
  • 8 ounces Fideo Noodles or cut spaghetti
  • 2 cups Tomatoes canned or fresh
  • 4 cloves Garlic fresh
  • 1/4 cup Olive Oil plus 3 tablespoons for toasting
Seasoning
  • 1 tablespoon Oregano dried or fresh
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Cumin
Broth
  • 4 cups Vegetable or Chicken Broth use vegetable for vegan
Garnishing
  • 1/4 cup Cilantro freshly chopped
  • 2 whole Limes for squeezing

Method
 

Preparation Steps
  1. In a blender, combine tomatoes, garlic, olive oil, oregano, salt, and cumin. Blend until smooth.
  2. In a large pot, heat remaining olive oil over medium heat. Add fideo noodles and stir for 3–5 minutes until golden brown.
  3. Pour tomato mixture over toasted fideo noodles and stir continuously for about 2 minutes.
  4. Gradually add vegetable or chicken broth, bring to a boil, then simmer for 5 minutes.
  5. Stir in freshly chopped cilantro and serve immediately with lime wedges.
