- In a blender, combine tomatoes, garlic, olive oil, oregano, salt, and cumin. Blend until smooth.
- In a large pot, heat remaining olive oil over medium heat. Add fideo noodles and stir for 3–5 minutes until golden brown.
- Pour tomato mixture over toasted fideo noodles and stir continuously for about 2 minutes.
- Gradually add vegetable or chicken broth, bring to a boil, then simmer for 5 minutes.
- Stir in freshly chopped cilantro and serve immediately with lime wedges.
