Marination and Cooking
  1. In a mixing bowl, combine chicken thighs with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Cover and marinate for at least 15 minutes.
  2. Heat a large skillet over medium-high heat and add vegetable oil. Cook the marinated chicken for 8-10 minutes until golden-brown and cooked through.
  3. Lower heat to medium and add butter to the skillet. Add chopped onions and minced garlic, sauté for about 5 minutes until onions are translucent.
  4. Stir in the tomato sauce and sugar, allow to bubble for 2-3 minutes. Return the cooked chicken to the skillet and mix to coat.
  5. Reduce heat to low, pour in heavy cream, stirring to create a creamy texture. Add black pepper and garam masala, simmer for 10 minutes.
  6. Finish with a pat of butter for richness and garnish with parsley. Serve hot with naan or rice.
