Method
 

Step-by-Step Instructions
  1. Marinate Chicken: Combine chicken breast pieces with Cajun seasoning and olive oil in a large bowl. Cover and marinate in the refrigerator for at least 30 minutes, preferably overnight.
  2. Cook Chicken: Heat a large skillet over medium-high heat and add 25g of butter. Once melted, add the marinated chicken and cook for 6-7 minutes per side until golden and the internal temperature reaches 165°F (75°C). Allow to rest for 5 minutes before slicing.
  3. Sauté Aromatics: In the same skillet, reduce heat to medium and add chopped onion and garlic. Sauté for 3-4 minutes until the onion is translucent.
  4. Add Rice: Sprinkle remaining Cajun seasoning, mix in day-old rice, and warm through for about 2-3 minutes.
  5. Make Sauce: Reduce heat to low, add remaining 15g of butter, then whisk in milk. Gradually add cream cheese and Parmesan until creamy.
  6. Serve: Layer the Cajun rice mixture on a platter, top with chicken slices, drizzle with creamy sauce, and garnish with chopped parsley.
