Step-by-Step Instructions for Garlic Bread Soup
  1. Preheat your oven to 350°F (175°C). Slice the stale French bread into 1-inch cubes.
  2. In a small bowl, melt butter and mix in minced garlic. Coat bread cubes with this mixture and sprinkle with salt and basil. Bake for 15 minutes.
  3. In a large pot, heat olive oil. Sauté diced onion, thyme, bay leaves, and salt for 7-8 minutes. Add minced garlic and cook for 30-60 seconds.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for about 15 minutes.
  5. Fold in cubed French bread and heavy whipping cream. Let it simmer for about 5 minutes until the bread softens.
  6. Blend the soup until smooth using an immersion blender. Stir in grated Parmesan cheese.
