Ingredients
  

For the Slaw
  • 2 cups Green Cabbage finely shredded
  • 2 cups Red Cabbage finely shredded
  • 1 large Carrot grated
  • 1 medium Red Bell Pepper thinly sliced
  • 3 Green Onions chopped
  • 1 small handful Fresh Cilantro chopped, optional
  • 1/2 cup Roasted Peanuts/Cashews optional
  • 2 tablespoons Toasted Sesame Seeds
For the Dressing
  • 1/4 cup Rice Vinegar or apple cider vinegar
  • 1/4 cup Low-Sodium Soy Sauce or gluten-free soy sauce
  • 2 tablespoons Honey/Maple Syrup maple syrup is vegan
  • 2 tablespoons Toasted Sesame Oil or olive oil
  • 1 tablespoon Fresh Ginger grated
  • 1 clove Garlic minced
  • 1 teaspoon Sriracha/Chili Garlic Sauce optional

Method
 

Preparation
  1. Gather all your fresh veggies. Finely shred green and red cabbage, grate the carrot, thinly slice the bell pepper, chop the green onions and cilantro, and combine in a large mixing bowl.
  2. In a separate bowl or jar, whisk together the rice vinegar, soy sauce, honey or maple syrup, sesame oil, grated ginger, minced garlic, and sriracha if using. Set aside.
  3. Pour the dressing over the vegetable mixture and toss everything together until well-coated.
  4. Allow the slaw to rest for at least 10 minutes to let flavors meld.
  5. Before serving, sprinkle the peanuts or cashews and toasted sesame seeds on top. Mix lightly and serve.
