Preparation Steps

  2. Mix rice vinegar, sugar, and sesame oil in a small bowl until dissolved, then fold into the cooked rice.
  3. Spread seasoned rice on a baking tray lined with parchment, press down to form a layer, then chill for at least 1 hour.
  4. Cut chilled rice into 2x1 inch rectangles.
  5. Heat vegetable oil in a skillet and fry rice rectangles until golden brown on both sides, then drain on a wire rack.
  6. Combine tuna, Kewpie mayonnaise, Sriracha, soy sauce, sesame oil, and lime juice in a bowl and mix well.
  7. Assemble by placing avocado on rice rectangles, topping with spicy tuna mix, and sprinkling with sesame seeds and chives.
