Preparation Steps
  1. In a medium bowl, whisk together the almond milk, chia seeds, maple syrup, vanilla extract, and salt. Stir well until the chia seeds are evenly distributed. Let it sit for 10-15 minutes, stirring occasionally, until thickened.
  2. Heat a skillet over medium heat and melt the butter. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Sauté for 5-7 minutes until soft and caramelized.
  3. In a separate bowl, mix rolled oats, all-purpose flour, brown sugar, and cinnamon. Pour in melted butter and stir until it resembles wet sand.
  4. Preheat your oven to 350°F (175°C). Spread the crumble mixture on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
  5. Layer the pudding starting with chia pudding, followed by apple compote, and then crumble. Repeat until ingredients are used up, finishing with crumble on top.
  6. Serve immediately or refrigerate for 30 minutes. Optionally drizzle with sauce or add whipped cream.
