- In a medium bowl, whisk together the almond milk, chia seeds, maple syrup, vanilla extract, and salt. Stir well until the chia seeds are evenly distributed. Let it sit for 10-15 minutes, stirring occasionally, until thickened.
- Heat a skillet over medium heat and melt the butter. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Sauté for 5-7 minutes until soft and caramelized.
- In a separate bowl, mix rolled oats, all-purpose flour, brown sugar, and cinnamon. Pour in melted butter and stir until it resembles wet sand.
- Preheat your oven to 350°F (175°C). Spread the crumble mixture on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
- Layer the pudding starting with chia pudding, followed by apple compote, and then crumble. Repeat until ingredients are used up, finishing with crumble on top.
- Serve immediately or refrigerate for 30 minutes. Optionally drizzle with sauce or add whipped cream.
