  • 1/2 Ripe Avocado, mashed you can also use guacamole
  • 1/2 cup Cooked Shredded Chicken use rotisserie or well-drained canned chicken
  • 2 slices Cheddar or Monterey Jack Cheese dairy-free cheese can be substituted
  • 1 tbsp Mayonnaise or Aioli optional
  • 1 tsp Lemon Juice
  • 1 tbsp Butter for toasting, olive oil can be used as an alternative
  • Salt and Pepper to taste

  • Crispy Bacon

Method
 

Step-by-Step Instructions
  1. In a small bowl, mash ½ ripe avocado with 1 teaspoon of lemon juice, adding a pinch of salt and pepper to taste.
  2. On a clean cutting board, take two slices of sourdough or artisan bread. Spread mayonnaise or aioli on one side of each slice if using.
  3. Spread your prepared avocado mixture on one slice, layer with ½ cup of shredded cooked chicken, and top with two slices of cheese.
  4. Heat a skillet over medium heat and add 1 tablespoon of butter. Place your sandwich in the skillet and grill for 3-4 minutes until golden brown.
  5. Flip the sandwich and toast the other side for another 3-4 minutes until the cheese is melted and the bread is golden.
  6. Remove from skillet, slice diagonally, and serve warm.
