- In a small bowl, mash ½ ripe avocado with 1 teaspoon of lemon juice, adding a pinch of salt and pepper to taste.
- On a clean cutting board, take two slices of sourdough or artisan bread. Spread mayonnaise or aioli on one side of each slice if using.
- Spread your prepared avocado mixture on one slice, layer with ½ cup of shredded cooked chicken, and top with two slices of cheese.
- Heat a skillet over medium heat and add 1 tablespoon of butter. Place your sandwich in the skillet and grill for 3-4 minutes until golden brown.
- Flip the sandwich and toast the other side for another 3-4 minutes until the cheese is melted and the bread is golden.
- Remove from skillet, slice diagonally, and serve warm.
