  • 1/4 cup maple syrup honey or agave can be used as alternatives
  • 2 cups rolled oats substitute with quick oats for softer texture
For the Topping
  • 1/2 cup chocolate chips use dairy-free dark chocolate for vegan option
  • to taste sea salt optional but recommended

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine the peanut butter and maple syrup. Stir until smooth, about 2 minutes.
  2. Gradually add in rolled oats, stirring continuously until coated and distributed evenly, about 2-3 minutes.
  3. Prepare molds and portion out the oat mixture, pressing down firmly. Fill each mold about 2/3 full, aim for 12 cups, about 5 minutes.
  4. Spoon a dollop of peanut butter on top of each cup. Optionally mix in protein powder.
  5. Place filled molds in the freezer for about 20 minutes to set.
  6. Melt chocolate chips with a drizzle of coconut oil in intervals until fully melted, about 1-2 minutes.
  7. Drizzle the melted chocolate over each cup. This step takes about 5 minutes.
  8. Return the cups to the freezer for another 20 minutes to set the chocolate.
  9. Remove from molds, sprinkle with sea salt, and serve. Can be stored in the fridge or freezer.
