  • 2-3 pieces Waxy Potatoes Diced
  • 1-2 medium Carrots Diced
  • 1 medium Onion Chopped finely
  • 2 cloves Garlic Minced
  • 2 tablespoons Butter Can substitute with olive oil
  • 2 chopped Scallions Can swap with leeks
  • 4 cups Chicken Broth Or vegetable broth for vegetarian option
  • 1 cup Sour Cream Ensure at room temperature
  • 3 tablespoons Fresh Dill
For the Seasoning
  • 1 to taste Salt
  • 1 to taste Pepper Freshly cracked preferred
  • 1 teaspoon Marjoram
  • 1 teaspoon Turmeric A little goes a long way
  • 1 teaspoon Nutmeg Freshly grated is best
  • 1 leaf Bay Leaf Remember to remove before serving

Step-by-Step Instructions for Polish Dill Soup
  1. Peel and dice the potatoes and carrots. Chop the onion and mince the garlic.
  2. Melt butter in a large pot over medium-low heat. Add onion and garlic, and cook until fragrant.
  3. Stir in diced carrots and scallions, cooking for another 2 minutes.
  4. Add seasonings and diced potatoes to the pot; mix well.
  5. Pour in chicken broth and bring to a boil. Cover and simmer for 15 minutes.
  6. Lower heat, stir in sour cream and fresh dill, and cook uncovered for another 5 minutes.
  7. Taste and adjust seasoning as needed. Serve warm, garnished with remaining dill.
