- Preheat your oven to 350°F (175°C) and grease a standard 9x5 inch loaf pan.
- Mix 1 tablespoon of ground flaxseeds with 2 1/2 tablespoons of water and let sit for 5 minutes until thickened.
- In a large mixing bowl, whisk together pumpkin puree, brown sugar, canola oil, prepared flax egg, and soy milk until smooth.
- In another bowl, combine all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Mix well.
- Gently fold the dry ingredients into the wet ingredients until just combined without overmixing.
- Pour the batter into the greased loaf pan and smooth the top. Sprinkle pepitas over the top.
- Bake for 1 hour and 15 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
