Ingredients
  

For the Batter
  • 1 tbsp Ground Flaxseeds For flax egg
  • 2.5 tbsp Water
  • 15 oz Canned Pumpkin Puree Plain, not pie filling
  • 1 cup Brown Sugar Or coconut sugar for a richer flavor
  • 1/2 cup Canola Oil Can substitute with vegetable or melted coconut oil
  • 1 cup Soy Milk Can substitute with almond, oat, or coconut milk
  • 2 cups All-Purpose Flour Can use gluten-free flour blend
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt Use sea salt or kosher salt
  • 1 tsp Ground Cinnamon Can substitute with pumpkin pie spice
  • 1/4 tsp Ground Nutmeg Optional but recommended
  • 1/4 tsp Ground Cloves Optional but recommended
  • 1/4 cup Pepitas For topping, toss in flour to prevent sinking

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a standard 9x5 inch loaf pan.
  2. Mix 1 tablespoon of ground flaxseeds with 2 1/2 tablespoons of water and let sit for 5 minutes until thickened.
  3. In a large mixing bowl, whisk together pumpkin puree, brown sugar, canola oil, prepared flax egg, and soy milk until smooth.
  4. In another bowl, combine all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Mix well.
  5. Gently fold the dry ingredients into the wet ingredients until just combined without overmixing.
  6. Pour the batter into the greased loaf pan and smooth the top. Sprinkle pepitas over the top.
  7. Bake for 1 hour and 15 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
