Ingredients
  

For the Cookie Dough
  • 1 cup Unsalted Butter at room temperature
  • 1 cup Brown Sugar can be swapped with coconut sugar
  • 1/2 cup Granulated Sugar plus additional for rolling
  • 1 large Egg or substitute with a flax egg for vegan
  • 1 teaspoon Vanilla Extract use pure vanilla for best results
  • 1/2 cup Molasses dark molasses can amplify flavor
  • 2 cups All-Purpose Flour or a gluten-free blend
  • 2 teaspoons Ground Ginger increase for bolder flavor
  • 1/2 teaspoon Ground Cloves allspice or cinnamon can be used
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Salt omit for low-sodium diets
  • 1 teaspoon Baking Soda can substitute with baking powder
For Rolling
  • 1/4 cup Granulated Sugar for rolling

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a stand mixer, cream the unsalted butter with brown sugar and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the egg, vanilla extract, and molasses, and beat on low speed until fully integrated.
  4. Whisk together the flour, ground ginger, ground cloves, cinnamon, salt, and baking soda in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Roll tablespoons of dough into balls and coat generously in granulated sugar before placing them on the prepared baking sheets.
  7. Bake for about 10 minutes until set around the edges and slightly underbaked in the center.
  8. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
