Baking Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a stand mixer, cream the unsalted butter with brown sugar and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the egg, vanilla extract, and molasses, and beat on low speed until fully integrated.
- Whisk together the flour, ground ginger, ground cloves, cinnamon, salt, and baking soda in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Roll tablespoons of dough into balls and coat generously in granulated sugar before placing them on the prepared baking sheets.
- Bake for about 10 minutes until set around the edges and slightly underbaked in the center.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
