Method
 

Step-by-Step Instructions
  1. In a large bowl, combine chicken thighs with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Let marinate for at least 15 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add marinated chicken and sear for about 8-10 minutes until golden brown and cooked through. Remove and set aside.
  3. In the same skillet, reduce heat to medium, add cold butter, and deglaze with a splash of water. Add minced garlic and diced onion, sauté for 3-4 minutes.
  4. Stir in tomato sauce and sugar into the onion-garlic mixture. Let simmer for 2-3 minutes.
  5. Reintroduce the cooked chicken and mix in heavy cream. Season with cayenne and garam masala, then let simmer for an additional 10 minutes.
  6. Stir in remaining cold butter until fully melted to finish the sauce.
  7. Serve immediately, garnished with parsley and accompanied by naan bread and steamed rice.
