Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare your baking dish.
  2. Season the chicken thighs with salt, pepper, oregano, garlic powder, and paprika.
  3. Cook the pancetta in a sauté pan over medium heat for about 3 minutes until crispy.
  4. Sear the chicken thighs for 1-2 minutes per side in the pan used for pancetta.
  5. Sauté shallots for about 2 minutes, then add minced garlic and cook for another 2 minutes.
  6. Deglaze the pan with chicken broth, scraping up brown bits, and let simmer for 3 minutes.
  7. Stir in butter and honey until melted and smooth.
  8. Return the chicken to the pan, add fresh thyme, cover, and transfer to the oven to bake for 15 minutes.
  9. Add peach slices around the chicken, switch to broil for 3-5 minutes until tender.
  10. Serve garnished with fresh basil and thyme.
