For the Egg Mixture
  • 2 cups Milk Use low-fat or plant-based milk for a lighter version.
  • 8 large Eggs Use large eggs for best results.
  • 1 cup Green Onions, diced Chives can be used if preferred.
  • 1 teaspoon Onion Powder Fresh onions could also work, but they may alter texture.
  • 1 teaspoon Salt Adjust according to taste.
For the Base
  • 1 pound Canadian Bacon, diced Use cooked ham or turkey bacon for a different taste.
For Garnish & Sauce
  • 1 teaspoon Paprika Optional for garnish and flavor.
  • 1 package Hollandaise Sauce Mix You can make homemade Hollandaise if preferred.
  • 1/2 cup Butter Use unsalted butter for better control over saltiness.

Method
 

Preparation
  1. Start by greasing a 9×13-inch baking dish with cooking spray or butter. Preheat your oven to 375°F.
  2. In a large mixing bowl, whisk together the milk, eggs, green onions, onion powder, and salt until smooth.
  3. Layer half of the diced Canadian bacon at the bottom of your greased baking dish. On top, evenly distribute all the diced English muffins, followed by the remaining Canadian bacon.
  4. Pour the egg mixture over the entire casserole, cover tightly with foil, and refrigerate for at least 8 hours or overnight.
  5. Uncover the casserole and sprinkle paprika over the top. Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes.
  6. Prepare the Hollandaise sauce by whisking together the milk, Hollandaise mix, and butter in a saucepan over medium heat.
  7. Allow the casserole to sit for a few minutes before slicing it into 10 even portions and drizzling with the warm Hollandaise sauce.
