Step-by-Step Instructions
  1. Prepare your rustic pizza dough by dividing it into 6-8 small balls and letting them proof for about 2 hours until doubled in size.
  2. In a food processor, whip together 20 ounces of goat cheese, 3 tablespoons of extra virgin olive oil, and a pinch of sea salt until smooth.
  3. Caramelize 2 cups of sliced onions in a pan over medium heat until golden brown, about 15-20 minutes.
  4. Shape the proofed dough into thin rounds about 10-12 inches in diameter.
  5. Preheat a cast iron griddle or grill pan and grill each pizza dough for about 1 minute on each side.
  6. Broil the grilled pizzas on a tray, spreading whipped goat cheese, followed by caramelized onions and sliced figs.
  7. Broil the pizzas for approximately 1 minute, keeping an eye on them to prevent burning.
  8. Remove pizzas, garnish with fresh herbs or arugula and reserved caramelized onions, slice, and serve hot.
