Ingredients

For the Muffin Batter
  • 2 cups ripe bananas Use overripe bananas for maximum natural sweetness and moisture.
  • 2 large eggs These act as a binder, adding structure and richness.
  • 1 cup creamy peanut butter Almond butter can be used as a substitute for allergies.
  • 1/4 cup maple syrup Agave syrup is a perfect vegan alternative.
  • 1/4 cup honey Can be omitted for a lower-calorie version.
  • 1 teaspoon vanilla extract Adds depth and warmth.
  • 1 teaspoon baking soda Essential for leavening.
  • 1/2 cup mini semi-sweet chocolate chips Can be replaced with dark chocolate or omitted entirely.

Equipment

  • Blender
  • Muffin Pan

Method

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease your muffin pan with coconut oil or non-stick spray.
  2. In a blender, combine the ripe bananas, large eggs, creamy peanut butter, maple syrup, honey, vanilla extract, and baking soda. Blend until the mixture is creamy and smooth.
  3. Transfer the batter to a mixing bowl and gently fold in the mini semi-sweet chocolate chips.
  4. Pour the muffin batter into the greased muffin pan, filling each cup about three-quarters full.
  5. Bake in the preheated oven for 12-15 minutes until the tops are set and a toothpick inserted comes out mostly clean.
  6. Once baked, let the muffins cool in the pan for about 10 minutes before transferring them to a wire rack.
