Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare your baking dish with non-stick cooking spray.
  2. In a large skillet, heat olive oil over medium heat, then add diced onion and minced garlic for 3-4 minutes.
  3. Add the ground turkey, breaking it apart as it cooks for 6-8 minutes until browned.
  4. Incorporate Italian seasoning, salt, and pepper, stirring to combine.
  5. Fold in the zucchini and drained diced tomatoes, cooking for 5 more minutes.
  6. Remove from heat and mix in half of the shredded cheese until melted.
  7. Transfer the mixture to the prepared baking dish, spreading evenly.
  8. Sprinkle the remaining shredded cheese, Parmesan cheese, and optional breadcrumbs over the top.
  9. Bake for 20-25 minutes until the cheese is bubbling and golden brown.
  10. Let the casserole cool for a few minutes before slicing.
