- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter, brown sugar, and granulated sugar until smooth and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the all-purpose flour, cornstarch, baking soda, and salt. Gradually combine with wet ingredients.
- Fold in the chocolate chips and half of the Halloween sprinkles.
- Form dough balls, flatten, place an Oreo in the center, and wrap the dough around it.
- Bake for 9-10 minutes until edges are set but centers look slightly underbaked.
- Immediately sprinkle extra chocolate chips and remaining sprinkles on top after baking.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
