Method
 

Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering. Add 1 diced onion and sprinkle with kosher salt. Sauté for 4-5 minutes until softened and translucent.
  2. Stir in 2 teaspoons of minced garlic and cook for an additional minute, stirring continuously.
  3. Add 2 tablespoons of tomato paste, 1 teaspoon of sugar, and 1 teaspoon of dried basil. Stir well and let cook for about 1 minute.
  4. Pour in 56 ounces of canned whole tomatoes and 2 cups of vegetable broth. Stir together, cover, and simmer for 20 minutes.
  5. Transfer the soup to a blender, add 1 cup of cottage cheese, and blend until smooth.
  6. Return the blended soup to the pot and warm it over low heat before serving. Garnish with grated Parmesan and fresh basil.
