Step-by-Step Instructions
  1. In a large non-stick skillet, heat 2 tablespoons of olive oil over medium-high heat until it shimmers.
  2. Add bite-sized pieces of chicken breast or thighs into the skillet, seasoning them with salt, pepper, garlic powder, and smoked paprika. Cook for 5-7 minutes.
  3. Lower the heat to medium and pour ½ cup of chicken broth into the skillet, scraping up the browned bits.
  4. Stir in 1 cup of honey BBQ sauce and 1 tablespoon of soy sauce into the skillet, letting it bubble for 2-3 minutes.
  5. Add 8 oz of uncooked penne pasta into the skillet, followed by enough water to barely cover the pasta. Cover and let it simmer for 12-15 minutes.
  6. Once the pasta reaches an al dente texture, return the cooked chicken to the skillet. Stir everything together and heat for an additional 2-3 minutes.
  7. Taste and adjust seasoning as needed. Garnish with cheese or red pepper flakes if desired.
