- In a large non-stick skillet, heat 2 tablespoons of olive oil over medium-high heat until it shimmers.
- Add bite-sized pieces of chicken breast or thighs into the skillet, seasoning them with salt, pepper, garlic powder, and smoked paprika. Cook for 5-7 minutes.
- Lower the heat to medium and pour ½ cup of chicken broth into the skillet, scraping up the browned bits.
- Stir in 1 cup of honey BBQ sauce and 1 tablespoon of soy sauce into the skillet, letting it bubble for 2-3 minutes.
- Add 8 oz of uncooked penne pasta into the skillet, followed by enough water to barely cover the pasta. Cover and let it simmer for 12-15 minutes.
