Method
 

Preparation
  1. In a medium bowl, whisk together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper until combined.
  2. Add chicken breasts to the bowl, ensuring they're coated with marinade. Cover and refrigerate for at least 30 minutes.
  3. Rinse jasmine rice under cold water. In a saucepan, bring chicken broth to a boil, stir in rice, cover, and simmer for about 15 minutes.
  4. Preheat the grill. Grill marinated chicken for 6 to 7 minutes per side until fully cooked.
  5. Let the grilled chicken rest for about 5 minutes.
  6. In a mixing bowl, combine diced avocado, red onion, cilantro, and olive oil. Mix gently.
  7. To assemble, place jasmine rice on a plate, top with sliced chicken, and spoon avocado mixture over it.
  8. Garnish with lime wedges and cilantro then serve.
