Ingredients
  

Dough Ingredients
  • 4 cups All Purpose Flour can substitute with gluten-free flour blend
  • 2 tablespoons Granulated Sugar can be substituted with coconut sugar
  • 2 teaspoons Active Dry Yeast instant yeast can be used as an alternative
  • 1/4 cup Brown Butter can substitute with unsalted butter
  • 1 large Egg or a flax egg for vegan option
  • 1 teaspoon Salt
  • 1 teaspoon Vanilla Extract use pure vanilla for best results
  • 1/2 teaspoon Almond Extract can be omitted if desired
  • 1 cup Milk any non-dairy milk can be used
Almond Filling
  • 1 cup Almond Meal can substitute with ground hazelnuts
Icing Ingredients
  • 2 cups Confectioner’s Sugar can replace with powdered erythritol
  • 1/4 cup Sliced Almonds can substitute with chopped pecans or walnuts

Method
 

Prepare Dough
  1. Combine 1 cup of warm milk (about 110°F) with 2 tablespoons of granulated sugar. Sprinkle 2 teaspoons of active dry yeast over the top and let it sit for 5-10 minutes.
  2. While the yeast blooms, whisk together 4 cups of all-purpose flour, 1/4 cup of granulated sugar, and 1 teaspoon of salt in a separate bowl.
  3. Add the yeast mixture to the flour mixture along with 1 egg, 1 teaspoon of vanilla extract, and 1/2 teaspoon of almond extract.
  4. Transfer the dough onto a lightly floured surface and knead in 1/4 cup of softened brown butter until soft and smooth, about 8-10 minutes.
  5. Grease a large bowl and place the kneaded dough inside, covering it. Refrigerate for 8-12 hours.
  6. After rising, roll out the dough into a rectangle, spread the almond meal filling, and roll tightly into a log.
  7. Cut the rolled dough into slices, placing seam-side down in a lined baking pan. Let them rise for another 30 minutes.
  8. Preheat your oven to 350°F (180°C). Bake the rolls for 18-20 minutes or until golden brown.
  9. Allow the rolls to cool for about 10 minutes. Whisk together confectioner’s sugar with a splash of milk until smooth for icing.
