- Finely chop the salami, pepperoni, Kalamata olives, roasted red peppers, and sun-dried tomatoes. Set aside.
- In a large mixing bowl, combine cream cheese, chopped ingredients, Parmesan cheese, garlic powder, Italian seasoning, and parsley. Mix until smooth.
- Scoop the mixture onto plastic wrap and shape it into a log. Wrap tightly.
- Chill the log in the refrigerator for at least 2 hours or overnight.
