- In a medium mixing bowl, combine 2 cups of ricotta cheese, 3/4 cup of powdered sugar, 1 teaspoon of vanilla extract, 1/2 teaspoon of cinnamon, and 1/2 cup of mini chocolate chips. Whisk until smooth and creamy.
 - Preheat oven to 375°F (190°C) and prepare your baking dish.
 - Unroll one pre-made pie crust and fit it into a 9x9-inch baking dish.
 - Spoon the ricotta mixture evenly over the bottom crust.
 - Lay the second pie crust over the filling, seal edges, brush with beaten egg, and sprinkle with sugar.
 - Bake for 30-35 minutes until golden and bubbly.
