  • 1 teaspoon Vanilla
  • 1/4 cup Treacle (Molasses) Honey or maple syrup can be used
  • 3 cups Plain (All-Purpose) Flour Use gluten-free flour for a gluten-free option
  • 1 teaspoon Baking Powder
  • 2 teaspoons Ground Ginger Adjust to taste
  • 1 teaspoon Cinnamon Adjust according to preference
  • 1/2 teaspoon Cloves A little goes a long way
  • 1/4 teaspoon Nutmeg Adjust to taste
Optional for Dipping
  • 1 cup White Chocolate Can be substituted with dark chocolate or omitted

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a large jug, combine the milk, vegetable oil, vanilla extract, brown sugar, and treacle. Whisk until well-blended.
  3. In a separate bowl, whisk the flour, baking powder, ginger, cinnamon, cloves, and nutmeg. Mix well and gradually pour the wet mixture into the dry ingredients.
  4. Turn the dough out onto a floured surface, divide into two logs (10-12 inches long), and place them on the baking tray.
  5. Bake for about 25 minutes until firm and lightly browned. Let them cool for 20 minutes.
  6. Slice the logs into 1-inch thick pieces while warm, and arrange them cut-side down on the tray.
  7. Bake the slices for an additional 10 minutes for extra crunch.
  8. For optional chocolate dip, melt the white chocolate and dip the ends of each biscotti.
