Step-by-Step Instructions
  1. Begin by peeling the sweet potatoes and cutting them into 1-inch chunks. Set aside in a large bowl.
  2. In a medium saucepan, melt 4 tablespoons of unsalted butter and 2 tablespoons of coconut oil over medium heat. Stir in honey, cinnamon, nutmeg, cayenne, and salt, and simmer for 2-3 minutes until thickened.
  3. In a large baking dish, arrange the sweet potato chunks in an even layer, and sprinkle diced apples over them. Drizzle the honey glaze over the top and toss to coat.
  4. Preheat your oven to 350°F (175°C). Cover the baking dish with aluminum foil and bake for 1 hour.
  5. Remove the foil and sprinkle chopped pecans over the mixture. Bake for an additional 30 minutes to toast the pecans and caramelize the glaze.
