- Start by placing fresh chicken breasts at the bottom of your slow cooker. Pour low-sodium chicken broth evenly over the chicken.
- Next, sprinkle freshly grated Parmesan cheese, minced garlic, and your chosen dried herbs over the chicken.
- Cover the slow cooker with its lid and set it to LOW for 6-7 hours or HIGH for 3-4 hours.
- Once cooked, carefully transfer the chicken to a plate using tongs. Shred the chicken using two forks.
- Preheat your oven to 375°F. Melt butter and mix in garlic powder. Brush this on the insides of your rolls and toast for about 5 minutes.
- Generously pile the shredded chicken into the toasted rolls, topping them with mozzarella cheese.
- Pop the assembled sandwiches under the broiler for 1-2 minutes until the cheese is melty and bubbly.
