  1. In a large mixing bowl, combine the sausage, cream cheese, pepper jack cheese, and Bisquick. Mix thoroughly for about 8-10 minutes until smooth.
  2. Let the mixture rest for about 10 minutes at room temperature.
  3. Preheat your oven to 250°F for indirect smoking. Roll the dough into 2-inch balls and place them on a parchment-lined baking sheet.
  4. Preheat your smoker or grill to 250°F. Set it up for indirect smoking.
  5. Smoke the sausage balls for approximately 25 minutes, until they reach an internal temperature of 155°F.
  6. Cool slightly and serve warm with the honey mustard dip.
