- Melt butter or olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Then add spinach, stirring until wilted, about 2-3 minutes. Season with salt, pepper, and nutmeg, if using, and cool slightly.
- Preheat the oven to 190°C (375°F) and line a baking sheet with parchment paper.
- Roll out chilled puff pastry into a rectangle about ¼ inch thick. Spread cooled spinach filling evenly, leaving about an inch on the edges, and sprinkle with Parmesan and mozzarella.
- Slice the pastry into strips about 1 inch wide, twist each strip gently from both ends, and place on the baking sheet.
- Whisk together egg and a splash of milk for the egg wash, then brush it over the tops of the twists. Optionally, sprinkle sesame or poppy seeds on top.
- Bake for 18–22 minutes until golden brown. Let cool for a few minutes before serving.
