Step‑by‑Step Instructions
  1. In a large mixing bowl, cream together the butter, sugar, and pudding mix until smooth and fluffy.
  2. Add the eggnog, eggs, vanilla extract, and rum extract. Mix until fully combined and creamy.
  3. In a separate bowl, whisk together the flour, baking powder, salt, and nutmeg.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Preheat the oven to 350°F (175°C) and grease and flour four mini loaf pans.
  6. Evenly distribute the batter into the pans, filling each about three-quarters full.
  7. For the crumb topping, combine cold butter, flour, sugar, and cinnamon, mixing until coarse crumbs form.
  8. Sprinkle the crumb topping over the batter in each pan. Bake for 35–40 minutes.
  9. Cool in the pans for 10 minutes before transferring to wire racks.
