  • 1 cup Low-Sodium Chicken Broth Or vegetable broth for vegetarian version.
  • 1 tsp Red Pepper Flakes Adjust to taste.

For the Finish

Method
 

Cooking Instructions
  1. Boil the Pasta: Bring a large pot of salted water to a boil, then cook pappardelle or fettuccine until al dente, about 8–10 minutes. Reserve ½ cup pasta water, then drain.
  2. Cook the Sausage: Heat olive oil in a large skillet over medium-high heat. Add sausage and cook until browned, about 6–8 minutes. Set aside.
  3. Sauté Vegetables: In the same skillet, add onion and bell peppers. Sauté for 5–6 minutes until tender. Add garlic and red pepper flakes, cooking for another 30 seconds.
  4. Deglaze and Build Sauce: Add grape juice or wine to deglaze, simmer for 2–3 minutes. Stir in chicken broth, diced tomatoes, and Italian seasoning. Season to taste.
  5. Combine Sauce and Noodles: Return sausage to the skillet, simmer for 8–10 minutes. Add drained noodles and reserved pasta water as needed.
  6. Finish and Serve: Stir in fresh basil and serve hot with grated Parmesan on top.
