- In a large bowl, whisk together 1 cup of buttermilk, 1 large egg, and 1 tablespoon of Cajun seasoning until well combined. Submerge your chicken into this mixture and ensure they're fully coated. Cover and refrigerate for at least 1 hour or overnight.
- In another bowl, combine 1 cup of flour, 1 cup of cornstarch, 1 tablespoon of Cajun seasoning, and 1 teaspoon of baking powder. Mix thoroughly, then coat each piece of marinated chicken generously with the flour mixture.
