Ingredients
  

Chicken
  • 4 pieces Boneless, Skinless Chicken Breasts Or chicken thighs for extra juiciness
  • 1/4 cup Honey Maple syrup works as a vegan alternative
  • 1/4 cup Lime Juice Use bottled lime juice for convenience but with less amount
  • 1 tablespoon Lime Zest Omit if not available
  • 2 cloves Garlic Minced; garlic powder can be a substitute
  • to taste Salt
  • to taste Pepper
Rice
  • 2 cups Cooked White or Brown Rice Substitute with quinoa for a lower-carb option
  • 1/4 cup Cilantro Parsley can be used instead
Avocado
  • 2 pieces Ripe Avocados Select ripe but firm avocados

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper. In a small bowl, mix honey, lime juice, lime zest, and garlic to create the glaze. Heat skillet over medium-high heat and cook chicken for 6-7 minutes each side until golden brown, adding glaze in the last 2 minutes. Let rest.
  2. While chicken rests, combine cooked rice with cilantro and a drizzle of lime juice in a medium bowl. Season with salt to taste and mix until evenly coated.
  3. Slice avocados in half, remove the pit, and scoop the flesh into a bowl. Toss with lime juice and season with salt and pepper.
  4. To assemble, place a ring mold on a plate. Layer the seasoned rice at the bottom, add avocado slices on top, and finally the glazed chicken. Remove the ring mold and drizzle with any remaining glaze.
