- Season the chicken breasts with salt and pepper. In a small bowl, mix honey, lime juice, lime zest, and garlic to create the glaze. Heat skillet over medium-high heat and cook chicken for 6-7 minutes each side until golden brown, adding glaze in the last 2 minutes. Let rest.
- While chicken rests, combine cooked rice with cilantro and a drizzle of lime juice in a medium bowl. Season with salt to taste and mix until evenly coated.
- Slice avocados in half, remove the pit, and scoop the flesh into a bowl. Toss with lime juice and season with salt and pepper.
- To assemble, place a ring mold on a plate. Layer the seasoned rice at the bottom, add avocado slices on top, and finally the glazed chicken. Remove the ring mold and drizzle with any remaining glaze.
