Step-by-Step Instructions for Lobster Pot Pie
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until translucent, about 3-4 minutes.
  3. Add diced carrot and diced celery to the skillet, sauté for about 5 minutes until softened.
  4. Pour in heavy cream and stock, simmer gently for 3-4 minutes until slightly thickened.
  5. Add lobster meat and frozen peas, stir, and simmer for an additional 5 minutes.
  6. Mix in fresh thyme, lemon juice, and salt and pepper to taste, and let cool for a minute.
  7. Roll out one pie crust and place it in a 9-inch pie dish, pour the filling into the crust.
  8. Unfold the second pie crust, cover the filling, crimp the edges, and cut slits in the top to allow steam to escape.
  9. Beat one egg and brush it over the top crust for a golden-brown finish.
  10. Bake in the preheated oven for 30-35 minutes until golden and bubbling.
