  • 1/4 cup Crumbled Feta or Goat Cheese for creaminess and tanginess

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper or lightly greasing it with olive oil.
  2. Peel and cut larger carrots into evenly sized sticks. Place prepared carrots in a mixing bowl.
  3. In a separate bowl, combine olive oil, maple syrup, Dijon mustard, balsamic vinegar, garlic powder, salt, black pepper, dried thyme, and red pepper flakes. Whisk until smooth.
  4. Pour the glaze over the carrots and toss until evenly coated.
  5. Spread the coated carrots in a single layer on the baking sheet and roast for 20-25 minutes, flipping halfway through.
  6. Garnish with parsley, feta cheese, or nuts before serving warm.
